Roast pork with mushrooms

Preparation

Take the product out of the box, open the bag and place the roast pork on a cutting board.
N.B. The bag will retain the broth released by the roast pork during the sous-vide low temperature cooking process which may be heated in a casserole and used as gravy for the roast pork. Remove the net from the roast pork and slice, place the slices in a baking tray, drizzle some olive oil and place in the pre-heated oven.
Reach the ideal serving temperature (80°). In a saucepan, cook the desired amount of mushroom sauce. Plate the roast pork, garnish with sauce and serve.

Chef’s suggestions

The suggested single serving is 150 g (100 g roast pork and 50 g mushroom sauce). Serve the roast pork with mushrooms with finely-chopped fresh parsley
